How can Chinese people that not live in China trace their decendants?

Indonesian chinese come from Fujian and Guangdong province only. As to which part of these two provinces, ....
If your father don't know, then ask grandfather, if they don't know then
Go to your ancestor's tomb, your ancestral village is inscribed on the tombstone.

I suppose you mean ancestors.
If you're Hokkien, that would mean you ancestors could have originated from southern parts of Fujian province.
Go to the tomb of your ancestors or plaque/ancestor tablets housed in temple. There are Chinese words written on them that recorded where they originated from. Some Chinese family maintained genealogy records for tracing their ancestry.
Some countries have birth certificates or records of your ancestor's birth. They might indicate where they originated from, when they immigrated to the countries.
As for connection to ''any relatives" in China, it might be difficult if contacts are already lost. The best way is to check for families with the same surname.

my parents told me their ancestral home and family history (but only the basic stuff).

Yes sorry I mean ancestor. My parents doesn't know about them and I rarely met my grandparents. They said that they are Hokkians but I found 3 possible ancestors from Ke family, one from Jiang tribe, one from Manchu and I forgot the last.

If you are serious about root searching , and if your grandparents are still around. Grab a video camera and start asking questions NOW. especially if your grandfather does not carry the family tree book from China.
I have never met my grandparents but I am lucky because he left us with a family book with his village name in China. After 6months intensive googling i found and narrow to few possibilities and went to the one i think match closely the most. To my surprise my grandfather's name exists in MANY of the family books in different families in that village because they share the same ancestors!.
after even more research i found that my ancestors has a copy of family book in library such as http://www.zslib.com.cn/
u need to know at least the village, your grand father's name , hopefully from your grandfather u find out even more information such as his father or grand father's name, not all chinese people keep record of all names. I was lucky.
Begin to search on your surname, your grandfather's village.

usually those who went to china will link back to china...when i trace my grandfather's village , i traced the family tree which leads for me to find out my ancestors were first Hokkien/fujian only to become cantonese later..
without knowing mandarin its going to be difficult, if they can still speak little best if go directly to the village where the grandpa used to live...at least in china they are still staying within the same surname village..not sure about taiwan... i know that for Leong surname there are many village in Guangzhou till today who are staying in the same village all over guangzhou...
if 1's ancestor is from a big branch of a surname usually their ancestors family book will be kept in library...knowing more names further up generation helps narrow down the search..

I do not believe that it's that different. Villages hardly change demographics even to this day, and they might still speak the same ancestral language as your ancestors did, though it might be different depending on the circumstances.my blog on my surname http://acidfreako.blog.163.com/
