Since ancient times till the end of 19th century, were there any famous chinese composer? I haven't heard of anyone, i wonder why...In the West we have a so rich tradition of music composition, just take a look here:

How is it that Chinese composers are not known, even though they have such a rich music?

Though not a composer per se, off the top of my head I can recall Huan Yi, who supposedly wrote the Plum Blossom Melodies during the Eastern Jin Dynasty, which is one of the most widely known pieces of classical ancient Chinese music. Whether he truly existed or not is another matter. I did some research into the topic and the only Huan Yi I could find was Huan Wen's father, which does correspond to that time period somewhat, though I don't have any other evidence to support the claim at the moment. I couldn't find much else on him though. That proves your point though I suppose. I'm afraid I don't know the reason why; my knowledge on Chinese music and culture is rather limited.
